
I wanted to share this recipe that I came across a long time ago. I cannot remember where I found it but that’s okay. I have it memorized because it is so easy to make, there’s no baking involved and I always take it to whatever gathering I am going to because everyone loves it. Some people won’t eat it if you tell them it is tofu beforehand, so just wait until they’ve eaten two slices and raved about how great it is. :]
Chocolate Tofu Pie
· 1 package tofu
· chocolate chips
· pie crust or graham crackers & margarine if you want to make your own crust.
Melt the chocolate chips on low heat. When melted, add tofu and chocolate to a food processor and mix until smooth. You can also use a blender, but a food processor has always worked better for me. Add mixture to pie crust and chill for a couple of hours.
If you’re making the crust yourself, melt some margarine (I use Earth Balance) and put the graham crackers in the processor. Add the melted margarine to the graham crackers and press into pie pan to form a crust. Pour tofu/chocolate mixture in and put in the fridge. Easy!
